Strawberry sorbet with coconut milk

Do you know that making a sorbet can be super easy?

This one took me about 10 minutes to prepare and as I am writing this post, the ice machine is doing the rest of the work for me 🙂

Personally, I love ice cream. I am really into milk ice cream, the typical Italian Gelato is my favourite: Straciatella, Pistachio, Chocolate…I can eat tons of it!

Unfortunately though, as you already know, Hubert needs to avoid dairy products, so most of the time I am enjoying my ice cream on my own, which is only half of the fun…However, a good alternative are fruit sorbets, which are usually prepared without any dairy products. Basically you can turn every fruit into a sorbet and it is not only a bit more refreshing than normal ice cream, but also a low-fat version for those of you who worry about their summer body;-)

But then we don´t eat ice cream to lose weight, right? I found this really nice strawberry sorbet recipe in a Johann Lafer special of Feinschmecker (Bookazine Nr. 26). He added some coconut milk which I think is fantastic, because it adds the creamy effect to the ice cream and also gives a special flavour.

Recipe for a strawberry sorbet with coconut milk

for 4 persons


  • 400 g very ripe strawberries (frozen strawberries are also fine)
  • 200 ml of coconut milk
  • Juice of 1 lime
  • 1 Tbsp vanilla sugar
  • 3-4 Tbsp icing sugar
  • Some strawberries and mint leaves for garnishing, if you like some meringue to spread over the dessert

1. Mix all ingredients with a blender (in a chilled ball)

2. Put into the ice machine and let it stir for about 45 mins until frozen (If you don´t have an ice machine, you can also put the mixture into the freezer and stir it with a fork from time to time.)

I served a strawberry tartar with the sorbet: Small strawberry cubes with some icing sugar and on top I put some meringue crumbs. Looks nice and matches very well!
