Rüeblitorte – something really sweet and Swiss

A recipe for a cake without flour, butter and milk

Rüeblitorte is a traditional Swiss speciality and originally it comes from canton Aargau. Basically it is a biscuit dough with carrots. I love this carrot cake because of several reasons:

  1. There is no dairy products in it – so someone with a milk intolerance can also enjoy it
  2. You can keep it for a few days and instead of becoming dry the cake becomes even better due to the carrots in it
  3. Perfect for guests who visit us here in Zurich to show them a little Swissness 🙂
  4. No, I would not say the cake is particularly healthy considering the amount of sugar in it – BUT we don´t eat cakes for the healthy sake of it, right?

If you prefer it a little less sweet, you can simply pass on the icing – well, then it is not a typical Rüeblitorte any longer but a nice and simple carrot cake. Enjoy!




  • 300 g ground almonds
  • 300 g sugar
  • 5 egg yolks
  • 5 egg whites
  • 300 g finely grated carrots
  • zest of one bio lemon
  • 4 Tbsp of starch
  • 2-3 Tbsp of Kirsch
  • 1 Tbsp of baking powder
  • 1/2 tsp of cinnamon
  • 3 Tbsp apricot jam
  • clove powder
  • salt

For the icing:

  • 300 g sugar powder
  • 2-3 Tbsp of Kirsch
  • 1-2 Tbsp water
  • marzipan carrots

You also need

  • a greased springform pan (24 cm) the bottom covered with baking paper
  1. Mix the egg yolks with the sugar until you have a creamy mass
  2. Add the carrots, almonds, lemon zest, starch, baking powder, Kirsch, salt, cinnamon and a little bit of clove powder. Mix well.
  3. Beat the egg white and fold carefully into the dough
  4. Fill in the springform pan and put into lower part of the pre-heated oven at 180°C
  5. Take out after 1 hour, let cool down, and remove the frame of the springform pan, turn down the cake and remove also the springform pan bottom
  6. Warm up the apricot jam and spread over the cake
  7. Mix the sugar powder, Kirsch and water until frothy and equally cover the cake with it. Place the marzipan carrots on the cake.
