Mediterranean Burger – with grilled veggies, goat cheese… and beef


Even though the air is still a bit chilly here in Denmark, we are already in the middle of the BBQ season (but we’re not yet Danish enough to eat outside…). I love nice steak from the grill, fish, shellfish, or veggies… but sometimes it just needs to be big juicy burger. Either classic, or in one of many possible variations… my latest invention (or maybe rather experiment) was this Mediterranean Burger.

I happened to have some grilled eggplant and goat cheese left over from a BBQ salad I made the day before and some other veggies in the fridge. The combination of the grilled vegetables, a big juicy beef patty, some pesto and the goat cheese was a combination to die for… I did even play with the thought of leaving the beef away next time!

  • 4 burger buns
  • 4 large slices of eggplant
  • 2 red bell peppers
  • 8 slices of goat cheese
  • 4 leaves green salad
  • 4 tbsp basil pesto
  • red onion in thin slices
  • olive oil
  • Patty:
  • 800g minced beef
  • 1 tsp sea salt
  • freshly ground pepper
  • ½ tsp chili powder
  • ½ tsp brown sugar
  • 1 onion, grated
  • 1 garlic clove, finely chopped
  • ¼ tsp ground cumin
  1. Prepare the patties by mixing all ingredients thoroughly. Form 4 patties, if available, using a burger press. Make a shallow depression in each burger with your thumb (to ensure the patties keep a good , flat shape when grilling).
  2. Prepare your grill for direct strong heat.
  3. Brush the eggplant slices with some olive oil and season with salt. Cut the bell pepper in 3-4 flat slices each. Grill both - the eggplant until soft and brown, the peppers on the skin side until the skin gets black "blisters". Put the pepper slices in a plastic bag to cool off, then peel off the skin.
  4. Then grill the patties on direct heat with an open lid, 4 minutes per side for a medium result.
  5. Put on the side of the grill whilst shortly roasting the patties.
  6. Spread one tbsp of pesto on each bun, add salad, beef patty, belll pepper and eggplant slices and some onion rings. Season well with salt and pepper and cover with goat cheese and the bun "lid".
  7. Enjoy immediately 🙂
