Beef Burger with Sweet Potato Mash, Chorizo and Gruyère


A good friend of mine is working at Zurich’s best burger place and a few weeks ago we visited her to indulge in one of these amazing meat buns. Last time I saw her for a coffee we brainstormed on new beef burger creations and came up with this delicious variation for FoodFamily. So last Sunday was burger time and the result was pretty amazing too. I sticked to the classy burger bun, but chose Radicchio instead of green salad. The highlight is the mashed potato as a fancy and sweet topping together with crunchy pieces of spicy Chorizo. The piquant flavour of the Swiss cheese “Gruyère” complements the ingredients perfectly. But even without the cheese, the burger is delicious and gratifying as such. Instead of the traditional onion rings I chose onion sprouts and spring onions to garnish the burger and provide a discreet onion flavour…

Beef Burger with Sweet Potatoe Mash, Chorizo and Gruyère

Serves: 2
  • 2 Burger buns
  • 2 sweet potatoes
  • 1 Radicchio
  • 300 g minced beef
  • 1 small Chorizo
  • 1 spring onion
  • Onion sprouts
  • Ketchup
  • Mayonnaise
  • Salt, Pepper
  1. Peel the sweet potatoes, cut them in pieces and boil in salted water until soft. Mash them and season them with salt and pepper. I also added some liquid tomato concentrate as flavour enhancer.
  2. Shape the meat into burgers
  3. Wash the onion sprouts
  4. Clean the spring onion and chop finely
  5. Pick some Radicchio leaves and wash them
  6. Slightly toast the buns
  7. Slice the Chorizo and cut into small cubes, fry in a pan without oil until crispy. Take aside and put on paper towel to soak the grease
  8. Fry the burgers from each side for about 2 minutes
  9. Finely slice the Gruyère and put it on top of the meat
  10. Shortly grill the burger (only the meat) with the cheese in the oven until the cheese melts
  11. Prepare the burgers, by first putting Ketchup and Mayonnaise on the lower part of the bun, then put the Radicchio leaf, the meat, top with mashed sweet potato, Chorizo, onion sprouts and spring onions
